Lou's Bleu Warm Potato Salad




My aunt and I have been cooking for each other this week, and I have been loving her recipes! (I hope she likes some of mine..) She made this last night for dinner with some grilled chicken and veggies, and omg, it was great. This would be awesome with steaks, too! The warm-ness of this salad is definitely a change from your typical summer potato salad. We will definitely be making this again!

  • 1 pounds small red potatoes
  • 2 tbsp bleu cheese (more or less to taste)
  • 1 cup sour cream
  • 3 or 4 finely chopped green onions
  • sea salt and pepper, to taste


Clean potatoes and boil until tender. Let cool for 15 minutes or until warm to touch. Toss in bowl with crumbled bleu cheese, green onion, salt, pepper, and sour cream. If dressing seems too thick, add splash of milk! Serve immediately. Enjoy!
