Everything-Stuffed Squash





































I love eating squash in the fall and winter, and a great way to make them even more delicious is to stuff them with other good foods! Because I often cook for just me, I like to make celebration squash- the smaller, colourful ones. Half a squash is a great side for any meal! Anyways, this recipe is more like a guideline, since the ingredients depend on the size of the squash, what you have in your fridge, etc. I made this in the fall and it was quite delicious.
  • 1 celebration squash (Any smaller squash will do)
  • 1/4 cup red pepper, diced
  • 1/4 cup onion, diced
  • 1 cube frozen spinach, thawed, or 1/3 cup fresh, coarsely chopped
  • 1/3 cup brown rice, cooked (You can use more or less depending on your preference)
  • 1 clove garlic, minced
  • Feta cheese
  • Parmesean
Preheat oven to 350 degrees. Cut squash in half and clean out. Bake in oven for 30 minutes. Meanwhile, in a frying pan with , saute garlic, onion, and red pepper on medium heat for 5 minutes, or until onions become transclucent. Add spinach and cook for an additional 2 minutes. Take off heat, and stir in rice and feta cheese. Spoon mixture into the hollow part of the squash, and sprinkle with parmesean cheese. Bake for an additional 20 minutes (This may be more or less depending on the size of the squash, just check it after 20 minutes!) Enjoy!
