Guacamole with Corn Chips



After a day filled with reading “Understanding Nutrition” I learned about the body's metabolism of fats. Avocados are a staple in my diet and luckily for me they contain healthy fats and lots of omega. This recipe makes about ½ cup of guacamole, perfect if you need a light meal or snack!

Guacamole:
  • ½ Avocado
  • 1 tsp Chili flakes
  • 2 tsp Lime juice
  • 2 tbsp Cherry tomatoes
  • Pinch of sea salt 
Corn Chips:
  • 3 Small Corn tortillas
Preheat the oven to 350 degrees. Spray a cookie sheet with cooking spray. Cut tortillas in 1/8 (or size of preference). Place your tortillas on the sheet and bake for approximately 5 minutes.
While your chips are in the oven, cut an avocado in half and slice in large chunks. Many guacamole recipes are extremely smooth, but I prefer the large chunks of avocado! Slice the cherry tomatoes in half and add remaining ingredients. This spice and taste of summer brings some warmth to the cold winter months!
Ps. This recipe is best served with a margarita, but unfortunately for me that will need to wait for the weekend ;)
