Banana-Chip Mini Muffins




















Amazing recipe to kick off the food blog! Incredibly delicious and decently nutritious.. Borrowed from allrecipes. Enjoy!

  • 1 3/4 cups all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup vegetable oil
  • 1/2 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas
  • 3/4 cup semisweet chocolate chips
Sift together flour, sugar, baking powder, soda, and salt. Combine egg, oil, yogurt, and vanilla in separate bowl. Mix wet and dry ingredients together, then fold in mashed bananas and chocolate chips. Pam mini muffin sheets and fill to 3/4 full. Bake at 350 degrees for 12 minutes or until toothpick comes out clean. Eat immediately!
